Hearty Lasagna Roll-ups

  • 8oz lasagna noodles (about 12)
  • 1lb lean ground beef
  • 3 cloves garlic minced
  • 1 jar spaghetti sauce divided
  • 1 15oz container ricotta cheese
  • 3 cups mozzarella cheese divided
  • 1 large egg beaten
  • 2tsp fresh parsley
  • ¼ tsp salt

-Preheat oven to 350 degrees. Cook the noodles according to the package directions. Drain and rinse with cold water, drain again and lay on a paper towel I a single layer.

-Meanwhile, cook the beef and garlic in a large skillet over medium high heat until browned and crumbly. Drain the fat from the skillet. Pour 1 ½ cups spaghetti sauce into the ungreased 11x7 baking dish.

-Combine the beef, 1 cup mozzarella cheese, egg, parsley, and salt in large bowl. Mix well. Divide and spread the beef mixture evenly on top of each cooked noodle.

-Rollup each noodle. Place the rolled noodle seam side down in the sauce in the baking dish. Top with the remaining sauce and cheese. Bake until the rollups are heated through and the cheese is melted 30-35 min.
