Baked Spaghetti Carbonara

  • 8oz spaghetti 2tbsp butter
  • 4 large eggs, beaten
  • ¾ cup shredded parmesan cheese
  • ½ tsp salt ¼ tsp black pepper
  • 8 strips bacon cooked and crumbled
  • ¼ cup chopped green onions (about 4 medium) divided
  • (I think this would be good with a rotisserie chicken as well)

-Preheat oven to 350degrees. Lightly spray and 8 or 9 inch baking dish. Cook the spaghetti according to the package directions. Drain and toss with the butter. Keep warm

-Combine the eggs, ½ cup of parmesan, the salt and pepper in a large bowl. Add the warm spaghetti. Toss to mix.

-Stir the bacon and 2tbsp green onions into the spaghetti mixture.

-Pour the spaghetti mixture into the prepared baking dish. Sprinkle with the remaining cheese and green onions. Bake until heated through and the eggs are cooked. 25-30 min.
